Red rice neer dosa with coconut chutney


Ingredients


Red rice .......1 cup

Salt.............to taste

Cooking oil - 3 tbsp


Chutney

Raw. Coconut.......grated 2 tbsp

Garlic..........2 pearl

Ginger........1 small piece

Salt.......to taste

Yogurt......1 tbsp

Green coriander.....1 cup

Mint leaves........few

Green chili........1 tiny one

(Optional)



Seasoning of the chutney

Ghee ..........1/2 teasp

Curry leaves........few

Mustard seed......1/2 tsp


Method

Soak rice in warm water overnight. Grind to make a smooth paste. Add 4 cups of water n salt

For chutney grind everything together to a smooth paste. Season with Mustard seed n curry leaves.

Take a non-stick flat pan. Keep it over gas to heat up well. Take some oil n rub the whole pan to give a slight greasiness. Once the pan is hot pour 1 cup batter in the pan and let it spread well in the whole pan. Allow the dosa to get cooked well. Fold well as an omelet n serve with chutney. You can serve hot or make them in advance n keep them to serve later.


Seasoning

heat the ghee...add the mustard seeds and curry leaves to it and add this seasoning to the chutney.
