Found an article from back in 2011.
Pizzas made with homemade Bhakri as a base topped with fresh tomato sauce and vegetables have always been a favourite snack/meal at home.
(Bhakris are flatbread or chapatis made with wholewheat or millet flour, we can make them hard or soft as per our liking) .
Tomato sauce
Blanch and purée the tomatoes.
Add olive oil to a deep pan. Add chopped onion and crushed garlic to the oil. Sauté it till light brown. Now add the tomato purée. Cook till it turns it thickens to a paste consistency. Add salt, sugar, some dry Italian herbs and chilli flakes to your taste.
Keep it aside.
Pizza base
Take the flour of your choice, whole wheat or any millet. We could even mix a couple of different flours.
Sorghum is a great millet choice in the summer season. It’s cooling.
When kneading the flour into a dough… for pizza, since we want the base slightly harder than the usual chapatis…. Keep the kneading to a bare minimum. ( the more we knead the softer the dough gets) . Use room temperature water for kneading. We can add some salt to the flour. Leave the dough for about 2 hours before rolling it into thickish chapatis. Cook till well done.
Keep them aside.
Toppings
Have fun with these. Play around with
Green capsicum
Red/ yellow peppers
Onion
Mushrooms
Baby corn or corn 🌽
And some
Fresh Mozzarella cheese to top it.
Go all out… do up your pizza and bake it for about 20 min at about 100 degrees Fahrenheit. A preheated oven is given a crisper pizza base.
Some fresh basil leaves along with the vegetables add to the flavour.
