Ingredients

  • Rice Flour - 3 tbsp

  • Sorghum Flour - 3tbsp

  • Ghee or coconut oil or olive oil - 1 tbsp

  • Coconut Palm sugar - 3 tbsp

  • Egg - 1

  • Baking Soda - 2 pinches

  • Cardamom powder- 1/4th tsp

  • Vanilla essence - a little less than 1/4th tsp

  • Sliced almonds/Pistachio - 1 tbsp


Method

  • Preheat the oven to 150 degrees C

  • In a medium-size bowl beat the sugar and oil/ghee together. Beat in the egg and the vanilla essence. Then combine the rice, sorghum flour, baking soda and the cardamom powder . Stir the flour mixture into the wet mixture and mix until combined. Stir the sliced nuts evenly into the dough.

  • (As an option and for fun and variety, you can also add chocolate chips or raisins.)

  • Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet . Flatten the balls a little with the palm of your hand. Bake for 25 minutes. Cool on a baking rack for about 15 minutes before serving.
