Rice Flour - 3 tbsp
Sorghum Flour - 3tbsp
Ghee or coconut oil or olive oil - 1 tbsp
Coconut Palm sugar - 3 tbsp
Egg - 1
Baking Soda - 2 pinches
Cardamom powder- 1/4th tsp
Vanilla essence - a little less than 1/4th tsp
Sliced almonds/Pistachio - 1 tbsp
Preheat the oven to 150 degrees C
In a medium-size bowl beat the sugar and oil/ghee together. Beat in the egg and the vanilla essence. Then combine the rice, sorghum flour, baking soda and the cardamom powder . Stir the flour mixture into the wet mixture and mix until combined. Stir the sliced nuts evenly into the dough.
(As an option and for fun and variety, you can also add chocolate chips or raisins.)
Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet . Flatten the balls a little with the palm of your hand. Bake for 25 minutes. Cool on a baking rack for about 15 minutes before serving.
